- Cold-Pressed Coconut Oil Granola:
- Ingredients:
- 3 cups old-fashioned rolled oats
- 1 cup nuts of your choice (e.g., almonds, walnuts, pecans), roughly chopped
- ½ cup dried fruits (e.g., raisins, cranberries, apricots), chopped
- â…“ cup honey or maple syrup
- ÂĽ cup cold-pressed coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of salt
- Instructions:
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, chopped nuts, dried fruits, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Stir until well combined.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for about 30-35 minutes or until golden brown, stirring halfway through to ensure even baking.
- Remove from the oven and let it cool completely. The granola will become crisp as it cools. Store in an airtight container.
